Chewy chocolate date bites

think delicious chewy bites with a creamy nut butter centre & a perfect chocolatey shell. these are so easy to make you really cant say no.

Ingredients

12 pitted medjool dates

185g dairy free chocolate

1/4 cup almond butter or peanut butter

Method

  1. gently slice through 1/3 of each date length ways, and remove pit without breaking date in 2 pieces

  2. spoon 1 tsp of nut butter into the centre of each date, and lightly press closed.

  3. place all dates into the freezer for 15-20 minutes.

  4. 1-2 minutes before removing dates from freezer, place chocolate into a double boiler, and melt until smooth, stirring regularly.

  5. Remove bowl from heat.

  6. Take cooled dates and dip into melted chocolate until covered. Using a fork is an easy way to ensure dates are evenly coated, especially when removing.

  7. Place coated dates on a wire rack, and place in the freezer for 15-20 minutes to set completely.

  8. Store in a container in the fridge, to enjoy!
