These are your perfect weekend pancake treat. Not only are they perfectly sweet but packed with fibre & protein without all the added refined sugars. These dairy and gluten free pancakes are sweet, fluffy and just so scrumptious!

Ingredients

2 x ripe spotty bananas

2 x eggs

1/3 cup of buckwheat flour

1 tsp vanilla

2 Tbsp monk fruit sweetener (Lakanto)

½ tsp baking powder

Method

  1. in a bowl mash bananas well. Crack and whisk eggs through banana mixture

  2. add other ingredients to banana egg mixture and stir till well combined

  3. heat a pan over medium heat. cook pancakes in 1/4 cup spoonfuls, flipping when bubbles start to form on top and edges become lightly crispy.

  4. add toppings of choice! greek/coconut yoghurt & fruit are definitely my favourite!
