Chocolate chip cookies

i think every cook enthusiast needs a go to chocolate chip cookie recipe, and that is just these… my famous gluten-free & dairy-free chocolate chip cookies are always a crowd pleaser!

not only are these gluten & dairy free but they are perfectly gooey, sweet & salty - everything you want a classic chocolate chip cookies

Serves: 20

Prep Time: 10 minutes

Cook Time: 11 minutes

Total Time: 81 minutes

Ingredients

1 cup coconut oil (softened, not melted)

1 & ¼ cup coconut sugar

1 & ½ tsp vanilla extract 

2 large eggs (at room temperature)

4 & ½ cups almond meal

1 tsp baking soda

1.5 cups dairy-free chocolate of choice (my go to is dark & white chocolate)

Pinch of salt

Method

  1. In a bowl cream together coconut oil & coconut sugar. Add the eggs & vanilla to the creamed sugar mixture, and stir gently.

  2. Add in almond meal & baking soda into the wet mixture. Mix together until well combined.

  3. Fold in chocolate chips & salt. Then cover bowl and place cookie dough in the fridge for minimum of 1 hour (up to 12 hours)

  4. Pre-heat oven to 180 degrees, once refrigeration period has finished. 

  5. On lined trays spoon 1 heaped Tbsp amounts of the cooled cookie dough into hands, roll into balls & place on trays. Press down on each lightly.

  6. Bake for 9-11 minutes, or until lightly golden on the edges 

  7. Let cool for 10-15 minutes, and enjoy! These can be stored in the fridge for ~3 days in a sealed container.
