dark chocolate & walnut Spelt Muffins

It is no surprise that I love a muffin, but my ultimate muffin combo has to be filled with dark chocolate & walnuts!

Made with wholemeal spelt flour for a richer flavour… this is about to become your go to muffin recipe.

Dark chocolate & Walnut Spelt Muffins

Perfectly fluffy spelt muffins filled with gooey bits of dark chocolate & crunchy walnuts… What more could you want?

Cook Time: 22 minutes

Total Time: 40 minutes

Ingredients

2 cups + 1 Tbsp spelt flour

1 tsp baking powder

½ tsp baking soda

Pinch of salt

2 large egg

½ cup coconut sugar

½  cup melted coconut oil

⅔  cup soy milk

1 tsp vanilla 

150g 70% dark chocolate chopped

½ cup walnuts (roughly chopped)

Method

  1. Preheat the oven to 180 degrees celsius. Line a muffin tin with baking paper, and set aside.

  2. In a large bowl add dry ingredients (spelt flour, baking powder, baking soda, salt) and stir together.

  3. Mix wet ingredients into the dry mixture (eggs, coconut oil, soy milk & vanilla). Stir until well combined. Finally mix in the coconut sugar.

  4. Fold in the dark chocolate and walnuts.

  5. Spoon evenly into muffin tins, making a total of 10 muffins.

  6. Place into the oven for 22-25 minutes.

  7. Once removed from the oven, let cool for 10 minutes. Enjoy!
