chocolate chip cookies
not only are these gluten & dairy free but they are perfectly gooey, sweet & salty - everything you want a classic chocolate chip cookies

Ingredients
- 1 cup coconut oil (softened, not melted)
- 1 & ¼ cup coconut sugar
- 1 & ½ tsp vanilla extract
- 2 large eggs (at room temperature)
- 4 & ½ cups almond meal
- 1 tsp baking soda
- 1.5 cups dairy-free chocolate of choice (my go to is dark & white chocolate)
- Pinch of salt
Method

In a bowl cream together coconut oil & coconut sugar. Add the eggs & vanilla to the creamed sugar mixture, and stir gently.

Add in almond meal & baking soda into the wet mixture. Mix together until well combined.

Fold in chocolate chips & salt. Then cover bowl and place cookie dough in the fridge for minimum of 1 hour (up to 12 hours)

Pre-heat oven to 180 degrees, once refrigeration period has finished.

On lined trays spoon 1 heaped Tbsp amounts of the cooled cookie dough into hands, roll into balls & place on trays. Press down on each lightly.

Bake for 9-11 minutes, or until lightly golden on the edges

Let cool for 10-15 minutes, and enjoy! These can be stored in the fridge for ~3 days in a sealed container.
