fluffy banana pancakes
lightly sweetened with monk fruit, these refined-sugar free pancakes are fluffy, sweet & nutritious.

Ingredients
- 2 x ripe spotty bananas
- 2 x eggs
- 1/3 cup of buckwheat flour
- 1 tsp vanilla
- 2 Tbsp monk fruit sweetener (Lakanto)
- ½ tsp baking powder

in a bowl mash bananas well. Crack and whisk eggs through banana mixture

add other ingredients to banana egg mixture and stir till well combined
- 03
heat a pan over medium heat. cook pancakes in 1/4 cup spoonfuls, flipping when bubbles start to form on top and edges become lightly crispy.

add toppings of choice! greek/coconut yoghurt & fruit are definitely my favourite!
