Ingredients
- 1 Tbsp apple cider vinegar
- 1 Cup soy milk
- 3 bananas (extra ripe), mashed
- 2 + ⅓ cups wholemeal spelt flour
- ½ cup coconut sugar
- ½ tsp baking powder
- ¼ tsp bicarb soda
- 1 Tbsp chia seeds
- pinch of salt
- 2 Tbsp melted coconut oil
- 1 tsp vanilla

Preheat your oven to 180 degrees Celsius.

In a mixing bowl, combine soy milk and apple cider vinegar, gently stirring. Allow it to sit for 5-10 minutes to let the soy milk curdle and thicken.

In another large bowl, mix together flour, coconut sugar, baking powder, baking soda, chia seeds, and a pinch of salt until well combined.

Incorporate the soy milk mixture and mashed bananas into the dry ingredients, along with vanilla extract. Mix until just combined; the mixture might appear slightly sticky.
