greek style salad

If there was one thing I had to eat for the rest of my life it would be this salad - the perfect balance of tasty & nutritious.

Greek Style Salad

Ingredients

  • 2 roma tomatoes, diced
  • 1 medium lebanese cucumber, diced
  • 1 capsicum (i used half red & half yellow), diced
  • ¼ red onion, diced
  • 50g greek feta, crumbed

dressing

  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp red wine vinegar
  • 1 tsp dried oregano
  • Pinch of pepper

Method

  1. 01

    In a bowl add in chopped up vegetables and feta

  2. 02

    In a separate small dish combine all dressing ingredients and stir lightly.

    Pour dressing over salad and toss together.
