greek style salad
If there was one thing I had to eat for the rest of my life it would be this salad - the perfect balance of tasty & nutritious.

Ingredients
- 2 roma tomatoes, diced
- 1 medium lebanese cucumber, diced
- 1 capsicum (i used half red & half yellow), diced
- ¼ red onion, diced
- 50g greek feta, crumbed
dressing
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 Tbsp red wine vinegar
- 1 tsp dried oregano
- Pinch of pepper

In a bowl add in chopped up vegetables and feta

In a separate small dish combine all dressing ingredients and stir lightly.

Pour dressing over salad and toss together.
