My own healthy twist on coconut clusters. These nut and buckwheat filled chocolate coconut clusters are honestly just YUM

Serves: 12

Ingredients

¾ cup shredded coconut

¼ cup sunflower seeds

¼ cup slivered almonds

¼ cup, buckinis (buckwheat kernels)

150g dark chocolate

1 Tbsp coconut oil

1 Tbsp peanut butter

1 Tbsp honey

Method

  1. In a bowl, place the dry ingredients (coconut, sunflower seeds, almonds and buckinis). Lightly mix and set aside.

  2. In a separate bowl place the chocolate in bits, and heat in the microwave to melt. Stir chocolate every 30s to ensure it melts evenly and does not burn.

  3. Into the melted chocolate, mix in the coconut oil & peanut butter. Stir until combined.

  4. Pour the chocolate mixture into the dry bowl and stir till everything is well coated. Add in the honey and stir again.

  5. Spoon the mixture in heaped Tbsp amounts into silicone molds (I used friand molds), and place in the fridge for 2 hours or overnight to set.

  6. Take the crackles out of the molds and place in a container. Store in the fridge, and enjoy!
